Ingredients

Scale

Main Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 celery stalks, diced
  • 2 medium carrots, diced
  • 3 cloves garlic, minced
  • 1 can (15 ounces) white beans, drained and rinsed (cannellini or Great Northern)
  • 4 cups vegetable broth (or chicken broth)
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

For Garnish and Serving

  • Fresh parsley, chopped
  • Lemon wedges

Instructions

  1. Heat Olive Oil: In a large pot, heat the olive oil over medium heat until shimmering.
  2. Sauté Vegetables: Add the diced onion, celery, and carrots to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened and beginning to brown.
  3. Add Garlic: Stir in the minced garlic and cook for about 1 minute until fragrant but not browned.
  4. Incorporate Beans: Add the drained and rinsed white beans to the pot, stirring them in to combine with the sautéed vegetables.
  5. Pour in Broth and Tomatoes: Pour the vegetable or chicken broth into the pot. Add the entire can of diced tomatoes, including the juice, to enhance flavor and texture.
  6. Seasoning: Sprinkle in the dried thyme and rosemary. Add salt and pepper according to your taste preferences, stirring well to distribute the seasonings.
  7. Simmer: Bring the soup to a gentle boil, then reduce the heat to low and allow it to simmer uncovered for approximately 30 minutes to let the flavors meld.
  8. Adjust Consistency: For a creamier texture, lightly mash some of the beans against the side of the pot using a fork or potato masher, then stir to incorporate.
  9. Taste and Adjust: Sample the soup and adjust the seasoning by adding more salt, pepper, or herbs as needed to suit your preference.
  10. Serve: Remove the soup from heat. Ladle it into bowls, garnish with freshly chopped parsley, and serve with lemon wedges on the side for a bright, zesty finish.

Notes

  • You can substitute vegetable broth with chicken broth if not vegetarian.
  • For a smoky twist, add a pinch of smoked paprika.
  • Leftovers keep well refrigerated for up to 3 days and can be frozen for up to 2 months.
  • Adding a splash of olive oil or grated Parmesan cheese before serving enhances richness.
  • Use fresh herbs if available, adjusting quantities to taste.
