Tortillas:

  • 4 large burrito-sized flour tortillas

Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 2 tbsp Imperial granulated sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon

Apple Layer:

  • 2 medium apples, thinly sliced

Additional:

  • 4 tbsp butter
  • melted butter for brushing
  • mixture of cinnamon & sugar for sprinkling

Instructions

  1. Cheesecake Filling: In the bowl of a stand mixer, combine cream cheese, sugar, vanilla, and cinnamon. Whip until smooth.
  2. Assemble Quesadillas: Spread 1/4 of the cheesecake filling on one side of a tortilla. Layer apples on half of the tortilla. Fold over to close.
  3. Cook Quesadillas: Melt 1 tbsp butter in a skillet over medium-low heat. Cook each quesadilla for 1-2 minutes per side until golden brown.
  4. Finish: Brush cooked quesadillas with melted butter, sprinkle with cinnamon sugar. Cut into wedges and serve hot.
