For the Fritters:
- 2 cups (250g) all-purpose flour
- ¼ cup (50g) granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 2 large apples, peeled, cored, and diced (Granny Smith or Honeycrisp)
- 2 large eggs
- ½ cup (120ml) milk
- ¼ cup (60g) unsalted butter, melted
- 1 tsp vanilla extract
For the Glaze:
- 1 cup (120g) powdered sugar
- 2 tbsp milk
- ½ tsp vanilla extract
- Preheat the Oven: Set your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine Wet Ingredients: In another bowl, whisk the eggs, milk, melted butter, and vanilla extract until smooth.
- Make the Batter: Gently fold the dry ingredients into the wet ingredients until just combined. Stir in the diced apples.
- Shape & Bake: Drop heaping spoonfuls of batter onto the baking sheet, leaving space between each fritter. Bake for 15–18 minutes until golden brown.
