Chicken and Potatoes:
- 1 1/2 lbs. chicken breasts, boneless skinless, cut into 1” pieces
- 24 oz. red potatoes, cut into 1” cubes
- 4 Tablespoons grated parmesan cheese, divided
- 2 Tablespoons minced garlic, divided
- 2 Tablespoons olive oil, divided
- Preheat and prepare pan: Preheat your oven to 400°F (200°C). Lightly spray a large sheet pan with non-stick cooking spray and set it aside.
- Make spice mixture: In a small bowl, combine paprika, garlic salt, onion powder, dried parsley, and ground pepper. Mix well. Divide the spice mixture evenly into two portions; set one aside for the potatoes and reserve the other for the chicken.
- Prepare potatoes: In a mixing bowl, add the cubed red potatoes, 2 tablespoons grated parmesan cheese, 1 tablespoon olive oil, 1 tablespoon minced garlic, and one portion of the spice mixture. Toss everything together with a rubber scraper or spoon to coat the potatoes evenly.
- Roast potatoes: Spread the potato mixture on one side of the prepared sheet pan. Place the pan in the oven and roast the potatoes at 400°F for 15 minutes since they require extra cooking time.

- Combine and cook: After the initial 15 minutes, remove the sheet pan from the oven. Arrange the coated chicken pieces on the empty side of the pan alongside the partially cooked potatoes. Return the pan to the oven and bake both for an additional 20 minutes, until the chicken is cooked through and the potatoes are tender and golden.
