Dry Ingredients:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup honey
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Nut Mixture:

  • 1/2 cup finely chopped walnuts
  • 1/4 cup finely chopped pistachios
  • 1/4 cup finely chopped almonds
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • Additional honey for drizzling after baking

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners or by greasing well.
  2. Prepare dry ingredients: In a large bowl, whisk together flour, baking powder, and salt.
  3. Mix wet ingredients: In another bowl, combine melted butter, granulated sugar, honey, milk, and vanilla extract until well mixed.
  4. Combine wet and dry: Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing.
  5. Prepare nut mixture: In a small bowl, mix the walnuts, pistachios, almonds, cinnamon, and cloves.
  6. Combine all: Gently fold the nut mixture into the muffin batter.
  7. Fill muffin tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake: Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool and drizzle: Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack and drizzle each with honey while still warm.

Notes
