  • 2/3 cup butter, at room temperature
  • 1 2/3 cup granulated sugar
  • 2/3 cup buttermilk
  • 1 1/4 cups mashed bananas, (about 2.5 medium bananas)
  • 3 eggs
  • 2 cups all-purpose flour
  • 1 1/4 tsp baking soda
  • 1 1/4 tsp baking powder
  • 3/4 tsp salt
  • 2/3 cup pecans, chopped

Cream Cheese Frosting:

Instructions

  1. Preheat oven and prepare pan: Preheat the oven to 350 degrees. Grease and flour a 9×13-inch pan.
  2. Mix wet ingredients: In a mixing bowl, beat the softened butter with sugar until combined. Mix in buttermilk and mashed bananas. Add eggs one at a time.
  3. Add dry ingredients: Gently mix in flour, baking soda, baking powder, and salt. Stir in chopped pecans.
  4. Bake: Pour the batter into the prepared pan and bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.
  5. Cool and frost: Cool the cake completely in the pan for about an hour, then frost with cream cheese frosting.
