Kielbasa Sausage:

  • 1 lb of kielbasa sausage, sliced

Cheese Tortellini:

  • 1 lb of cheese tortellini (fresh or frozen)

  • 2 cups of bell peppers, diced
  • 1 cup of red onion, diced
  • 3 cloves of garlic, minced

Seasonings and Others:

  • 1 tablespoon of olive oil
  • 1 teaspoon of Italian seasoning
  • ½ teaspoon of smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Preheat the Grill: Turn on your Blackstone grill to medium-high heat and let it preheat for about 5 minutes.
  2. Boil Tortellini: While the grill is heating, bring a pot of salted water to a boil. Add the tortellini and cook according to package instructions, usually around 3-5 minutes. Drain and set aside.
  3. Prep Vegetables: In a mixing bowl, combine the diced bell peppers, red onion, minced garlic, olive oil, Italian seasoning, smoked paprika, salt, and pepper. Toss until the vegetables are well coated.
  4. Cook the Kielbasa: Add the sliced kielbasa directly to the preheated grill. Sear for about 3-4 minutes, until the sausage is browned and slightly crispy.
  5. Add Vegetables: Push the kielbasa to one side of the grill and add the seasoned vegetables to the other side. Grill for another 5-7 minutes, stirring occasionally until the vegetables are tender and slightly charred.
  6. Combine Ingredients: Add the drained tortellini to the grill. Gently toss everything together to combine all the flavors and heat through, about 2-3 minutes.
  7. Check Seasoning: Taste and adjust seasoning as needed, adding more salt, pepper, or seasoning to your preference.
  8. Garnish and Serve: Remove from the grill, sprinkle with fresh parsley, and serve immediately. Optionally, top with grated Parmesan cheese for added richness.
