Ingredients

Scale

For the Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup rolled oats
  • 1 cup fresh blueberries (or frozen, if out of season)

For the Cheesecake Swirl:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Make the Cookie Dough: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined. Fold in the rolled oats and blueberries gently.
  4. Prepare the Cheesecake Swirl: In another mixing bowl, beat the cream cheese until smooth. Add the granulated sugar, egg yolk, and vanilla extract, and mix until fully combined and creamy.
  5. Assemble the Cookies: Take a tablespoon of cookie dough and place it on the prepared baking sheet. Add a teaspoon of the cheesecake mixture on top of the dough, then take another tablespoon of cookie dough and cover the cheesecake mix. Lightly swirl with a toothpick or knife to create a marbled effect.
  6. Bake the Cookies: Bake in the preheated oven for about 12-15 minutes until the edges are golden, and the centers look set but still soft. Remove from the oven and let them cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
  7. Serve and Enjoy: Once cooled, serve these delightful cookies with a glass of milk or your favorite beverage. Enjoy the creaminess of the cheesecake and the burst of blueberries in every bite!

Notes
