  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon

Wet Ingredients:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1/3 cup plain Greek yogurt
  • 1 tsp vanilla extract

Additional Ingredients:

  • 1 cup fresh blueberries
  • For the Cinnamon Swirl:
  • 1/4 cup granulated sugar
  • 1 1/2 tsp ground cinnamon

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 350°F (175°C) and grease/flour a 9×5 inch loaf pan.
  2. Prepare dry ingredients: In a medium bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside.
  3. Mix wet ingredients: In a large bowl, cream butter and sugar. Beat in eggs, then add bananas, yogurt, and vanilla. Mix until smooth.
  4. Combine wet and dry ingredients: Gradually add dry mix to wet mix, stirring until just combined.
  5. Prepare cinnamon swirl: In a small bowl, mix sugar and cinnamon.
  6. Layer batter in pan: Pour half of batter into pan. Sprinkle half of cinnamon swirl mix and half of blueberries. Repeat layers.
  7. Swirl and bake: Use a knife to swirl cinnamon mix into the batter. Bake for 50-60 minutes.
  8. Cool and serve: Allow bread to cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
