  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sour cream

For the Crumble Topping:

  • 3/4 cup all-purpose flour
  • 1/2 cup rolled oats (optional)
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 2 cups fresh blueberries

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Make the crust: Whisk flour, powdered sugar, and salt in a bowl. Cut in cold butter until crumbly. Press into pan and bake until golden.
  3. Prepare the cheesecake filling: Beat cream cheese and sugar until smooth. Add egg, vanilla, and sour cream; mix well.
  4. Assemble the bars: Spread cheesecake filling over crust and top with blueberries.
  5. Make the crumble topping: Mix flour, oats, brown sugar, cinnamon, and salt. Cut in butter until crumbly. Sprinkle over blueberries.
  6. Bake: Bake for 35-40 minutes until golden and slightly set.
  7. Cool and chill: Cool in pan, then refrigerate for at least 2 hours until firm.
