  • Wet Ingredients:

  • 1 cup Plain Yogurt
  • 1 Egg
  • 1 teaspoon Pure Vanilla Extract
  • 1/4 cup Vegetable Oil
  • 1 1/2 Tablespoons Milk
  • Additions:

  • 1 cup Blueberries, fresh or frozen
  • Optional Topping: Rolled oats or Turbinado sugar

Instructions

  1. Preheat Oven: Heat oven to 375°F / 190°C.
  2. Prepare Muffin Tin: Line a 12-cup muffin tin with paper liners and spray with nonstick cooking spray.
  3. Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking soda, baking powder, and salt.
  4. Combine Wet Ingredients: In a separate bowl, whisk together yogurt, egg, vanilla, oil, and milk.
  5. Combine Wet and Dry Ingredients: Pour wet ingredients into the dry ingredients and stir until just combined.
