These delightful Brownie Carrots are a fun and festive treat perfect for spring or Easter celebrations. Made by transforming simple brownies into carrot-shaped desserts using colorful orange and green candy melts and crunchy mini pretzel twists, they are both visually appealing and delicious. The recipe is easy to follow and uses basic ingredients, making it a great project for bakers of all levels.

Ingredients

Brownie Carrot Base

  • Brownies (store-bought or homemade) – cut into triangle shapes

Orange Candy Coating

  • Orange Candy Melts or Orange Melting Chocolate – about 1 cup

Carrot Greens

  • Mini Pretzel Twists – one per brownie carrot
  • Green Candy Melts or Green Melting Chocolate – about 1 cup

Instructions

  1. Prepare Brownies: Bake brownies according to package directions or your favorite recipe. Allow brownies to cool completely, then cut them into triangle shapes resembling carrot bodies. Insert a popsicle stick into the wider end of each triangle to serve as a handle, then place them in the freezer to chill and harden for about 15-20 minutes.
  2. Dip The Pretzels: Melt the green candy melts in a double boiler or microwave-safe bowl according to package instructions. Once melted, fully coat each mini pretzel twist in the green chocolate, then place them on a lined baking sheet and let them set until firm, about 10-15 minutes.
  3. Dip the Brownies: Melt the orange candy melts in a double boiler or microwave-safe bowl as per the package directions. Dip each brownie triangle into the melted orange candy, using a spoon to help coat the top evenly. Carefully transfer the coated brownies onto a lined baking sheet and allow the coating to dry and harden at room temperature for about 20-30 minutes.
  4. Assemble: Once both the green-coated pretzels and the orange-coated brownies have set, press one green pretzel into the larger end (top) of each brownie to mimic carrot greens. Optionally, drizzle extra melted orange candy over the brownie carrot for added texture and decoration. Allow the assembled brownie carrots to dry completely before serving.

Notes

  • You can use store-bought brownies or make your favorite homemade brownie recipe for best results.
  • If you don’t have candy melts, colored white chocolate chips can be substituted.
  • Make sure brownies are completely cooled before cutting and assembling to avoid breakage.
  • Chilling brownies after inserting sticks helps the candy coating adhere better without melting the brownies.
  • Use a lined baking sheet (parchment or silicone mat) to prevent sticking during drying.
  • Store brownies in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
