Ingredients

Scale

Broth and Seasoning

  • 3 cups Beef Broth
  • 1 tsp Thyme, fresh
  • 3 tsp Garlic, minced
  • Salt and Pepper to taste
  • 1 tbsp Tomato Paste

Vegetables and Oil

  • 2 tbsp Olive Oil
  • 2 small Yellow Onions, diced
  • 1 head Cabbage, medium, chopped
  • 1 cup Tomatoes, diced
  • 3 stalks Celery, sliced
  • 1 Red Bell Pepper, diced
  • 1 Yellow Bell Pepper, diced
  • 1 Orange Bell Pepper, diced

Instructions

  1. Heat the oil: In a large Dutch oven, heat the olive oil over medium heat until shimmering to create a flavorful base for the vegetables.
  2. Sauté onions and peppers: Add the diced onions, diced red, yellow, and orange bell peppers, and diced tomatoes to the pot. Cook on medium-high heat, stirring occasionally, for 4 to 6 minutes until they begin to soften.
  3. Add spices and tomato paste: Stir in the minced garlic, fresh thyme, salt and pepper to taste, and tomato paste. Mix well to evenly coat the vegetables and release the tomato paste’s rich flavor.
  4. Cook spices and paste: Continue cooking everything together for an additional 2 minutes over medium heat, which helps deepen the flavors.
  5. Add broth: Pour in the 3 cups of beef broth, stirring to combine all ingredients thoroughly.
  6. Add cabbage and celery: Add the chopped cabbage and sliced celery to the pot, stirring to distribute the vegetables evenly in the broth.
  7. Bring to boil: Increase heat and bring the soup to a rolling boil, ensuring all ingredients start cooking through.
  8. Simmer: Reduce the heat to low and let the soup simmer gently for 15 to 20 minutes, allowing all flavors to meld and the cabbage to soften without becoming mushy.
  9. Serve: Ladle the hot soup into bowls and enjoy this healthy, comforting meal.
