These decadent Caramel Brownies are the perfect treat for any chocolate lover. Rich, fudgy brownies topped with a layer of creamy caramel and chocolate chips make for a truly indulgent dessert.

Brownie Batter:

  • 1 cup butter
  • 12 ounces semi-sweet chocolate, chopped
  • 1 ½ cups sugar
  • 4 eggs
  • 1 T. vanilla
  • 1 ¼ c. flour
  • ½ tsp. salt

Caramel Layer:

  • 1 cup semi-sweet chocolate chips
  • 11-ounce bag of caramels, unwrapped
  • ⅓ cup heavy cream

Instructions

  1. Preheat oven to 350º. Line a 9 x 13 pan with non-stick foil.
  2. Melt butter and chocolate in a microwave-safe bowl. Add sugar, eggs, and vanilla; whisk well.
  3. Stir in flour and salt.
  4. Spread half the batter into the bottom of the pan. Bake for 20 minutes and cool for 20 minutes.
  5. Melt caramels and cream in a microwave-safe bowl until smooth. Pour caramel over the brownies while still warm. Spread with an offset spatula.
  6. Reheat the rest of the batter in the microwave just a few seconds to soften. Top the caramel layer with the remaining batter.
  7. Sprinkle on chocolate chips.
  8. Bake for an additional 20 minutes.
  9. Cool, chill, and then cut into squares.

Notes

  • For a cleaner cut, chill the brownies before slicing.
  • Store leftovers in an airtight container at room temperature.
