For the Steak
- 450g (1 lb) flank or sirloin steak
- 1 tsp paprika
- A sprinkle of salt and pepper, to your taste
- 2 tsp ground cumin
- 1 tbsp olive oil
- 1 tsp garlic powder
For the Queso Sauce
- 1½ cups whole milk
- A pinch of salt and pepper, to your liking
- ½ tsp ground cumin
- 2 cups cheddar cheese, shredded
- 2 tbsp butter
- 1 tsp chili powder
- 2 garlic cloves, chopped finely
- 1 cup Monterey Jack cheese, shredded
For the Rice
- 2 cups broth (or water if you prefer)
- A bit of salt, as needed
- 1 tbsp olive oil
- 1 cup long-grain white rice
- 1 tsp garlic powder
Optional Garnishes
- Fresh cilantro, chopped
- Wedges of lime
- Slices of avocado
- Cut jalapeños
- Prepare the Queso Sauce: Melt butter in a skillet over medium heat. Add minced garlic, cook until fragrant. Stir in milk, bring to a simmer.
