  • 2 tsp ground cumin
  • 1 tbsp olive oil
  • 1 tsp garlic powder

For the Queso Sauce

  • 1½ cups whole milk
  • A pinch of salt and pepper, to your liking
  • ½ tsp ground cumin
  • 2 cups cheddar cheese, shredded
  • 2 tbsp butter
  • 1 tsp chili powder
  • 2 garlic cloves, chopped finely
  • 1 cup Monterey Jack cheese, shredded

For the Rice

  • 2 cups broth (or water if you prefer)
  • A bit of salt, as needed
  • 1 tbsp olive oil
  • 1 cup long-grain white rice
  • 1 tsp garlic powder

Optional Garnishes

  • Fresh cilantro, chopped
  • Wedges of lime
  • Slices of avocado
  • Cut jalapeños

Instructions

  1. Prepare the Queso Sauce: Melt butter in a skillet over medium heat. Add minced garlic, cook until fragrant. Stir in milk, bring to a simmer.
  2. Cook the Rice: Rinse rice, toast with olive oil and garlic powder. Add broth/water, boil, then simmer until soft.
  3. Season and Cook the Steak: Season steak, cook in a hot skillet for desired doneness. Rest and slice thinly.
  4. Make the Cheesy Queso Sauce: Melt cheeses in milk, stirring until smooth. Season to taste.
  5. Assemble and Garnish: Serve steak over rice, drizzle with warm queso sauce. Garnish with cilantro, jalapeños, avocado, and lime wedges.
