These Cheesy Taco Potatoes are a delicious twist on classic loaded baked potatoes, featuring seasoned ground beef, cheddar cheese, and all the traditional taco toppings. Easy to make and perfect for a family dinner or casual gathering.

Potatoes:

  • 4 large russet potatoes
  • 1 tbsp olive oil
  • Salt and pepper to taste

Taco Beef:

  • 1 lb ground beef
  • 1 packet taco seasoning

Toppings:

  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare the potatoes: Scrub and dry the potatoes, then pierce them with a fork. Rub with olive oil, sprinkle with salt and pepper, and bake for 45 minutes.
  3. Cook the beef: Brown the ground beef in a skillet, drain excess fat, add taco seasoning and water, simmer for 5 minutes.
  4. Assemble: Cut a slit in each potato, fill with beef, top with cheese, bake for 5 minutes until cheese melts.
  5. Finish: Top with sour cream, green onions, tomatoes, olives, and cilantro. Serve hot.
