Brownies:

  • 1 cup butter, melted and cooled slightly
  • 2 1/2 cups granulated sugar (500g)
  • 1 tbsp vanilla extract
  • 4 large eggs
  • 1 1/2 cups whole wheat flour (or sub all-purpose flour) (190g)
  • 1 cup cocoa powder (95g)
  • 1/2 tsp salt

Cherry Cheesecake Filling:

  • 1 8 oz package cream cheese, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/3 cup granulated sugar
  • 1/2 can cherry pie filling (about 1 cup)

Instructions

  1. Prepare Pan and Preheat Oven: Line a 9×13 inch pan with tin foil and spray with cooking spray for easy cleanup. Preheat your oven to 350°F (175°C).
  2. Make Brownie Batter: In a large bowl, whisk together the melted butter and sugar until smooth. Add vanilla extract and eggs, whisking until fully combined. Stir in the whole wheat flour, cocoa powder, and salt until just combined. The batter will be thick.
  3. Layer Brownie Batter: Spread just over half of the brownie batter evenly into the bottom of the prepared pan.
  4. Prepare Cheesecake Filling: Using an electric mixer, beat the softened cream cheese, egg, vanilla extract, and sugar together until the mixture is smooth and creamy.
  5. Add Cheesecake Layer: Spread the cream cheese mixture evenly over the brownie batter layer in the pan. Spoon dollops of cherry pie filling over the cream cheese layer, gently spreading it around.
  6. Top with Remaining Brownie Batter: Drop spoonfuls of the remaining brownie batter on top of the cherry pie filling. It will be difficult to spread evenly, so just cover as much of the filling as possible. Smooth the batter slightly for more even coverage.
  7. Bake: Bake in the preheated oven for 30-35 minutes, or until the center appears set. The brownies may still have a little jiggle due to the gooey filling. Baking for 35 minutes is recommended if using a dark non-stick pan.
  8. Cool and Serve: Allow the brownies to cool to room temperature before cutting. For cleaner cuts and better texture, refrigerate for a few hours if possible, but they are delicious even if eaten sooner!
