Halloumi Preparation
- 200g halloumi, sliced into 1/2 inch cubes
- 2 tbsp cornflour
- 1 tsp black pepper
- 2 tbsp water
- 1 tbsp vegetable oil (for frying)
Sauce and Vegetables
- 2 garlic cloves, minced
- 2 spring onion heads, chopped into large wedges
- 1/2 red onion, chopped into thirds, keeping large chunks
- 1 tbsp light soy sauce
- 1 tbsp sriracha sauce
- 1 tbsp ketchup
- 1/2 tbsp gochugaru flakes (or 1/2 tsp normal chilli flakes)
- 1/2 tsp sugar (optional)
Garnishes

- Spring onion, sliced

- Prepare Halloumi: Slice the halloumi into 1/2 inch cubes to ensure even frying and a good crispy surface.
- Coat Halloumi: In a bowl, mix the cornflour, black pepper, and water thoroughly. Toss the halloumi cubes in this mixture until each piece is well coated.
- Fry Halloumi: Heat a non-stick frying pan over medium heat and drizzle in 1 tablespoon of vegetable oil. Carefully place the coated halloumi cubes into the pan, frying without moving them too much. Let each side cook for about 2 minutes or until golden brown. Remove from the pan and set aside.
- Cook Aromatics and Sauce: Add a little more oil to the pan, then add minced garlic, spring onion heads, and large chunks of red onion. Stir fry for a couple of minutes until fragrant. Add the soy sauce, sriracha, ketchup, gochugaru or chilli flakes, and optional sugar. Fry for another minute to combine flavors.
- Combine Halloumi and Sauce: Return the fried halloumi to the pan, tossing everything well so the halloumi cubes are fully coated in the chilli sauce.
- Serve with Garnishes: Transfer the spicy halloumi to a serving dish and sprinkle with sesame seeds, chopped coriander, sliced spring onion, and parsley for a fresh finish. Enjoy immediately.
Notes
- For a spicier kick, increase the amount of chilli flakes or add fresh sliced chillies.
- Be careful when frying halloumi, as it tends to ooze oil when overcooked; keep a close eye to maintain crispness.
- Gochugaru flakes add a slightly smoky flavor compared to regular chilli flakes, but either works.
- The sugar is optional but balances the sauce’s acidity and spice nicely.
- You can substitute vegetable oil with olive oil for a different flavor profile.
