Banana Bread Batter
- 1/2 cup (1 stick) unsalted butter, melted and cooled
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup mashed ripe bananas (about 2–3 bananas)
Cinnamon Sugar Swirl
- 1/4 cup granulated sugar
- 1 tablespoon ground cinnamon
- 2 tablespoons unsalted butter, melted (adjust as needed for swirl consistency)
Topping
- 6 thin banana slices (for placing on top of the batter before baking)
- Prepare Pan and Oven: Preheat your oven to 350°F (175°C). Lightly grease and flour a 9×5-inch loaf pan to prevent sticking and set it aside.
- Make the Batter: In a large mixing bowl, melt the butter and allow it to cool slightly. Whisk in the sugar until well combined. Add the eggs and vanilla extract, whisking until smooth. In a separate bowl, combine the flour, baking soda, and salt. Gradually stir the dry ingredients into the wet until just combined, then fold in the mashed bananas gently with a spatula to keep the batter moist and fluffy.
- Prepare Cinnamon Swirl: In a small to medium bowl, mix together the cinnamon and sugar. Stir in the melted butter until the mixture is thick but swirlable; add an additional tablespoon of melted butter if too thick, or more cinnamon sugar if too thin, ensuring it will hold its shape when swirled through the batter.
- Layer Batter and Swirl: Spread one-quarter of the batter evenly into the bottom of the prepared loaf pan. Dollop one-quarter of the cinnamon sugar mixture over it, then swirl it through the batter with a knife or the back of a wooden spoon. Repeat with one-third of the remaining batter and one-third of the cinnamon mixture. Then spread half of the remaining batter and half of the remaining cinnamon mixture, swirling gently. Finally, spread the remaining batter evenly over the top and dollop the remaining cinnamon sugar on top, making large swirls throughout the loaf.
- Add Banana Slices: Place six thin banana slices down the center of the batter on top to add an extra decorative and flavorful touch.
- Bake: Place the loaf pan on a baking sheet in the middle oven rack. Bake for 60 to 70 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean. If the loaf browns too quickly before baking through, tent it loosely with aluminum foil and continue baking until done.
- Cool: Allow the bread to cool in the pan for at least 30 minutes before removing it to a wire rack to cool completely. This resting time helps set the texture and makes slicing easier.
Notes
- The riper the bananas, the sweeter and more flavorful your banana bread will be.
- Use an oven thermometer if you are unsure about your oven temperature accuracy.
- Tent the loaf with foil if browning too fast to ensure the inside bakes fully without burning the crust.
- Banana bread continues cooking slightly after removal from the oven; expect the toothpick to come out with moist crumbs for perfect moistness.
- Store leftover banana bread in an airtight container at room temperature for up to three days or wrap tightly and freeze for longer storage.
