Cloud bread, also known as oopsie bread, is a light, fluffy, and low-carb alternative to traditional bread. Made with just a few simple ingredients, this gluten-free and keto-friendly bread is perfect for sandwiches, toast, or as a side to your favorite dishes.

Ingredients

Scale

Basic Ingredients:

  • 3 large eggs (separate the egg whites from the yolks)
  • 3 oz cream cheese (softened to room temperature)
  • 1/4 tsp baking powder
  • 1/4 tsp cream of tartar (optional, but helps stabilize the egg whites)
  • Salt, to taste (optional)

Optional Ingredients (for flavoring):

  • Herbs (e.g., rosemary, thyme, or oregano)
  • Garlic powder (for savory bread)
  • Sweetener (e.g., stevia or monk fruit for a sweeter bread)
  • Cinnamon (if you prefer a sweeter version)
  • Cheese (grated parmesan for a cheesy, savory twist)

Instructions

  1. Properly Separate the Eggs – The most crucial step in making cloud bread is separating the eggs without any yolk getting into the whites. If you’re concerned, use an egg separator or a clean hands method to separate them carefully.
  2. Use Room Temperature Cream Cheese – If your cream cheese is too cold, it can clump up when mixed with the egg yolks. Let the cream cheese sit at room temperature for 10–15 minutes before you start the recipe, or microwave it for a few seconds to soften it.
  3. Don’t Overmix the Egg Whites – When folding the egg whites into the yolk mixture, do so gently. Over-mixing can cause the whipped whites to lose their volume, resulting in denser bread. The key is to maintain the airiness for that signature cloud-like texture.
  4. Add Flavorings Early – If you want to add any extra flavorings like garlic, herbs, or spices, incorporate them when mixing the egg yolks and cream cheese. This allows the flavor to infuse throughout the bread, rather than just sitting on top.
  5. Storage Tips – Cloud bread is best eaten fresh but can be stored in an airtight container for up to 2–3 days. You can also freeze the individual slices by wrapping them in parchment paper and placing them in a ziplock bag. When ready to eat, simply thaw them at room temperature or pop them in the toaster for a quick breakfast or snack.

Notes

  • Cloud bread is fragile and best handled gently to maintain its airy texture.
  • Experiment with different flavor variations to suit your taste preferences.
  • For a crispier texture, you can toast cloud bread before serving.
