A comforting and easy-to-make one-pan meal featuring tender boneless chicken breasts cooked in a creamy garlic sauce with vibrant broccoli, perfect for a family dinner or meal prep.

Ingredients

Scale

Chicken

  • 2 pounds (907 g) boneless, skinless chicken breasts
  • Kosher salt to taste
  • Freshly cracked black pepper to taste
  • 1/2 teaspoon (2.5 ml) paprika

Cooking Ingredients

  • 4 tablespoons (60 g) butter, divided
  • 4 to 5 cloves garlic, minced
  • 10.5 ounces (298 g) condensed cream of chicken soup (1 can), or more if needed
  • 1 cup (240 ml) water

Vegetables & Garnish

  • 2 to 3 cups (480710 ml) broccoli, chopped
  • 1 teaspoon (5 ml) fresh parsley, chopped
  • Lemon wedges for serving (optional)

Instructions

  1. Season the Chicken: Season the chicken breasts on both sides with kosher salt, freshly cracked black pepper, and paprika. Set aside to let the flavors infuse.
  2. Sear the Chicken: In a large skillet over medium-high heat, melt 2 tablespoons of butter. Once hot, add the chicken breasts and cook about 5 minutes per side until nicely browned. Remove the chicken and keep it covered on a plate to stay warm.
  3. Sauté Garlic and Prepare Sauce: Using the same skillet, melt the remaining 2 tablespoons of butter. Add minced garlic and sauté until fragrant and lightly golden. Whisk in the condensed cream of chicken soup and water, stirring continuously until the sauce is hot, smooth, and bubbling. Lower the heat to low.
  4. Simmer Chicken and Broccoli: Return the seared chicken to the skillet along with the chopped broccoli. Cover with a lid and let simmer for about 10 minutes, or until the chicken is fully cooked through and the broccoli is tender. For firmer broccoli, add it later, closer to the end of cooking.
  5. Serve and Garnish: Serve the creamy garlic chicken and broccoli warm over rice or pasta. Garnish with chopped fresh parsley and lemon wedges if desired for a fresh, zesty finish.

Notes

  • Adjust the amount of cream of chicken soup based on desired sauce thickness.
  • For a lower sodium version, use a low-sodium cream of chicken soup and adjust salt accordingly.
  • Broccoli can be replaced with other vegetables like green beans or asparagus for variety.
  • Serve over rice, pasta, or mashed potatoes depending on preference.
  • Leftovers can be refrigerated in an airtight container for 3-4 days.
