Pasta:

  • 12 oz fettuccine or linguine

Salmon:

  • 1 lb salmon fillet, cubed

Sauce:

  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper, to taste

Instructions

  1. Cook Pasta: Cook pasta according to package instructions. Drain and set aside.
  2. Sear Salmon: Heat olive oil in a skillet over medium heat. Sear salmon cubes for 2–3 minutes per side until cooked through. Remove and set aside.
