Ingredients

Scale

Meat and Vegetables

  • 1 pound ground beef
  • 1 onion, chopped

Canned Goods

  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (15 ounces) tomato sauce
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (4 ounces) diced green chilies

Seasoning and Liquids

  • 1 packet taco seasoning mix (about 1 ounce)
  • 1 cup water
  • Salt and pepper to taste

Optional Toppings

  • Shredded cheese
  • Sour cream
  • Chopped cilantro
  • Jalapeños
  • Tortilla chips

Instructions

  1. Brown the Ground Beef: Place the ground beef in a skillet over medium heat and cook until it is fully browned, breaking it up as it cooks. Drain off any excess fat to keep the soup lighter.
  2. Sauté the Onion: Add the chopped onion to the skillet with the cooked beef and sauté for 3 to 4 minutes until the onion becomes translucent and fragrant.
  3. Combine Ingredients in Crock Pot: Transfer the beef and onion mixture into your crock pot. Add the drained black beans, kidney beans, corn, tomato sauce, diced tomatoes, and diced green chilies.
  4. Add Seasoning and Water: Sprinkle the taco seasoning mix over the ingredients in the crock pot, then pour in 1 cup of water.
  5. Mix Well: Stir all the ingredients together inside the crock pot until they are well combined and evenly distributed.
  6. Cook: Place the lid on the crock pot and cook on low for 6 to 8 hours or on high for 3 to 4 hours, allowing flavors to fully meld.
  7. Season to Taste: About 15 minutes before serving, taste the soup and adjust the seasoning with salt and pepper as needed.
  8. Serve and Garnish: Ladle the taco soup into bowls and top with any combination of shredded cheese, sour cream, chopped cilantro, jalapeños, and tortilla chips for added texture and flavor. Enjoy your comforting meal!

Notes

  • For a vegetarian version, omit the ground beef and add extra beans or vegetables.
  • Use low-sodium canned goods to reduce sodium content.
  • Adjust the level of spiciness by adding more or fewer diced green chilies or jalapeños.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
  • This soup pairs well with warm cornbread or a fresh green salad.
