  • 1 tsp pepper

Dumplings

  • 2 cups gluten-free biscuit mix dough (recommended: Bob’s Red Mill Gluten Free Biscuit & Baking Mix)

Instructions

  1. Combine Ingredients: Add the chicken breasts, gluten-free cream of mushroom soup, gluten-free cream of chicken soup, onion powder, herbed poultry mix, salt, pepper, and chicken broth into your crockpot. Stir gently to mix the ingredients evenly.
  2. Cook Chicken: Set the crockpot to cook on high for 2-3 hours or on low for 4-5 hours until the chicken is fully cooked and tender.
  3. Shred Chicken: Remove the chicken breasts from the crockpot and shred them using two forks or your preferred method. Return the shredded chicken back to the crockpot and stir to combine with the broth and soups.
  4. Prepare Dumplings: While the chicken continues to cook, prepare the gluten-free biscuit dough according to the package instructions. Once ready, roll the dough into small balls roughly 1-inch in diameter.
  5. Add Dumplings to Crockpot: Gently place the biscuit dough balls into the crockpot’s hot soup mixture. Stir carefully if needed to partially submerge them.
  6. Cook Dumplings: Continue to cook on high for an additional 30 minutes, or until the dumplings are cooked through and fluffy.
