Cucumber Sandwiches Recipe

Cream Cheese Spread:
- 8 oz cream cheese, softened
- 1/4 cup mayonnaise
- 2 teaspoons fresh dill, chopped
- 1 teaspoon fresh green onions, chopped
- 1 teaspoon lemon zest
- 1 teaspoon lemon juice
- 1/4 teaspoon garlic powder
- 1/8 teaspoon onion powder
- Salt & pepper, to taste
Assembly:
- 1 long English cucumber, thinly sliced
- 1 loaf sliced bread, crusts removed
- Cream Cheese Spread: In a small bowl, whisk cream cheese and mayonnaise until smooth. Stir in dill, green onions, lemon zest, lemon juice, garlic powder, onion powder, salt, and pepper.
- Assembly: Spread the cream cheese mixture onto bread slices. Layer thinly sliced cucumbers over half of the bread slices. Top with additional herbs if desired. Place the remaining bread slices on top. Cut each sandwich into three pieces. Serve immediately or refrigerate in an airtight container for up to 24 hours.
