Wet Ingredients:
- 1 cup light brown sugar, packed
- 1/2 cup unsalted butter, softened
- 1 egg
- 1 tsp vanilla extract
Dry Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp ground cinnamon (optional)
Additions:
- 1 cup rhubarb, finely chopped, fresh or frozen (thawed and drained)
