This Oven-Baked Nachos recipe combines layers of seasoned ground beef, colorful vegetables, melted Monterey Jack and cheddar cheese, all baked to perfection and topped with a zesty sour cream lime sauce and fresh avocado. Chips

  • 2 large bags tortilla chips (13oz. bag each)

Sautéed Beef

  • 1 lb lean ground beef
  • 3 tablespoons taco seasoning

Toppings

  • 1 can black beans, drained
  • 1 orange pepper, diced
  • 1 small red onion, diced
  • 1 cup cherry tomatoes, sliced
  • Kernels from 2 ears of corn
  • 1 can black olives, sliced
  • 1 can green olives, sliced
  • 2 scallions, chopped
  • 2 jalapeños, thinly sliced
  • 2 cups Monterey Jack cheese, shredded
  • 2 cups cheddar cheese, shredded

Sauce

  • ½ cup sour cream
  • Juice of 2 limes
  • ¼ teaspoon kosher salt

Garnish

  • 1 avocado, chopped
  • 2 tablespoons chopped cilantro

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the assembled nachos.
  2. Prepare Sauce: In a small bowl, combine sour cream, lime juice, and kosher salt. Stir well until smooth, then transfer to a squeeze bottle and refrigerate until ready to use. This sauce will add a fresh tangy flavor to the nachos.
  3. Cook the Beef: Heat a medium-sized skillet over medium-high heat. Add the ground beef, breaking it apart as it cooks. Once the beef loses its pink color, stir in the taco seasoning and cook for another minute to blend in the flavors. Drain excess fat by transferring the beef to a paper towel-lined strainer.
  4. Assemble the Nachos: Cut a length of parchment paper to fit inside a 10-inch springform pan, extending about 2 inches above the rim to create a collar. Place a handful of tortilla chips evenly on the pan bottom, then add a layer of cooked beef, followed by a small handful of mixed vegetables. Sprinkle 1 cup of Monterey Jack cheese over this layer. Repeat this layering process three more times, alternating the cheese between Monterey Jack and cheddar for varied flavor and texture. Finally, crush remaining chips and scatter any leftover beef and veggies on top.
  5. Bake: Place the springform pan into the preheated oven and bake the nachos for 30 minutes, or until the cheese is completely melted and bubbly.
  6. Remove from Oven & Garnish: Carefully remove the pan using oven mitts and place it on a large round plate. Undo the springform latch and gently lift the ring away from the nachos. Peel off and discard the parchment paper collar. Drizzle the sour cream sauce over the top in a back-and-forth motion, then sprinkle with chopped avocado and cilantro for a fresh finish.
  7. Serve: Serve the nachos immediately while hot and enjoy their gooey cheesy goodness alongside zesty toppings.

  • For spicier nachos, add more jalapeños or a dash of hot sauce to the beef mixture.
  • Using a springform pan helps create a neat, layered presentation but you can also bake on a large baking sheet if a pan is not available.
  • Customize toppings by adding guacamole, salsa, or sour cream on the side if desired.
  • Make sure to drain black beans and olives well to prevent sogginess in the layers.
