Rice Layer
- 2 cups cooked sushi rice
- 1 tablespoon rice vinegar
- ½ teaspoon sugar
- ½ teaspoon salt
Salmon Mixture
- 12 oz skinless salmon fillet, cooked and flaked
- ¼ cup mayonnaise
- 2 tablespoons Sriracha sauce
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
Toppings and Garnishes
- ½ cup shredded mozzarella cheese
- 2 sheets roasted seaweed (nori), cut into small squares
- 2 green onions, thinly sliced
- 1 tablespoon toasted sesame seeds
- Preheat Oven: Preheat the oven to 400°F (200°C). Lightly grease an 8×8-inch baking dish to prevent sticking.
- Prepare Rice Layer: In a bowl, combine the cooked sushi rice with rice vinegar, sugar, and salt. Mix thoroughly to season the rice evenly, then press it firmly into the bottom of the prepared baking dish to form a compact layer.
- Mix Salmon Filling: In another bowl, combine the flaked cooked salmon with mayonnaise, Sriracha sauce, soy sauce, and sesame oil. Mix until well blended to create a creamy, spicy filling.
- Assemble Bake: Spread the spicy salmon mixture evenly over the rice layer in the baking dish. Sprinkle the shredded mozzarella cheese evenly on top to create a cheesy crust when baked.
- Bake: Place the baking dish in the preheated oven and bake for 18-20 minutes or until the cheese is melted, bubbly, and slightly golden. Remove from oven and allow to cool slightly before serving.
- Garnish and Serve: Garnish the bake with thinly sliced green onions and toasted sesame seeds for extra flavor and crunch. Serve warm with the roasted seaweed squares on the side for scooping and eating.
Notes
- Use freshly cooked sushi rice for the best texture and flavor.
- Adjust the amount of Sriracha sauce according to your preferred spice level.
- You can substitute mozzarella with a mild melting cheese like Monterey Jack if desired.
- Serve immediately after baking for the best taste and texture.
- Leftovers can be stored in the refrigerator and reheated gently before serving.
