Crust:

  • 1½ cups chocolate cookie crumbs
  • ¼ cup sugar
  • 6 tbsp butter, melted

Cheesecake Filling:

  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 4 large eggs
  • 8 oz semi-sweet chocolate, melted
  • ½ cup milk chocolate chips, melted
  • ½ cup dark chocolate chips, melted

Chocolate Ganache Topping:

  • ½ cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Make the Crust: Preheat oven to 325°F (160°C). Combine chocolate cookie crumbs, sugar, and melted butter. Press into springform pan and bake for 10 minutes. Set aside to cool.
  2. Prepare the Cheesecake Filling: Beat cream cheese and sugar until smooth. Add sour cream, vanilla, and eggs one at a time. Divide filling into three bowls, fold in different melted chocolates. Layer mixtures in crust.
  3. Bake the Cheesecake: Bake at 325°F (160°C) for 50-60 minutes. Cool in oven, then refrigerate for at least 4 hours.
  4. Make the Chocolate Ganache Topping: Heat heavy cream, remove from heat, stir in chocolate chips. Pour over chilled cheesecake.
  5. Serve: Slice and serve once ganache has set. Optional: garnish with chocolate shavings or berries.
