Ingredients

Scale

Mashed Potato Cheese Puffs:

  • 3 cups mashed potatoes (best if chilled)
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite melting cheese)
  • 1/4 cup all-purpose flour
  • 2 tablespoons Parmesan cheese (optional, for added flavor)
  • 2 tablespoons fresh chives, finely chopped
  • 1/3 cup sour cream
  • Salt to taste
  • 2 eggs, beaten

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and lightly grease a muffin tin to prevent sticking.
  2. Mix the Wet Ingredients: In a large bowl, whisk the eggs and sour cream together until smooth.
  3. Add the Cheeses: Stir in the shredded cheese, Parmesan cheese, and chopped chives, ensuring even distribution.
  4. Season and Mix the Potatoes: Gently fold the mashed potatoes into the egg mixture, being careful not to break down the potatoes too much.
  5. Prepare to Bake: Spoon the mixture into the muffin tin, filling each cup about three-quarters full.
  6. Bake: Bake for about 20–25 minutes until the tops are golden brown and puffed up.
  7. Cool and Serve: Allow the puffs to cool slightly before removing them from the muffin tin.

Notes

  • For a gluten-free option, substitute all-purpose flour with gluten-free flour.
  • If you’re lactose intolerant, use lactose-free cheese and sour cream.
