Zucchini Tots:

  • 2 cups shredded zucchini
  • 1/2 medium onion, diced
  • 1/2 cup dry Italian seasoned breadcrumbs
  • 2 large eggs
  • 4 ounces extra sharp cheddar cheese, shredded
  • 3 tbsp. panko breadcrumbs
  • Salt and pepper to taste

Instructions

  1. Prepare Zucchini: After shredding the zucchini, lay it out on a clean kitchen towel and sprinkle salt on it. Let it sit for 15 minutes, then squeeze out as much water as you can.
  2. Mix Ingredients: In a medium mixing bowl, combine zucchini, onion, breadcrumbs, eggs, and cheese. Season with salt and pepper, then stir well.
  3. Fill Muffin Cups: Spray a 24-cup mini muffin tin with cooking spray. Fill each cup with the zucchini mixture, pressing down slightly to compress. Sprinkle panko breadcrumbs on top for added crunch.
  4. Bake: Bake at 400 degrees Fahrenheit for 15-18 minutes, or until slightly golden brown. Run a knife around each tot as soon as they are out of the oven to loosen. Let cool briefly before removing from the pan.
