Crust
- 3 cups graham cracker crumbs (about 22 full sheet graham crackers)
- 3/4 cup unsalted butter, melted
- 6 tablespoons granulated sugar
Filling
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 can (14 oz) sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup diced strawberries
- 2 1/2 cups whole strawberries
- Prepare Pan: Spray a 9 x 13 inch pan with non-stick spray and set aside.
- Make Crust: In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press half of this mixture evenly into the bottom of the prepared pan to form the crust. Save the remaining crumbs for topping.
- Puree Strawberries: Place the whole strawberries in a blender and puree for 1-2 minutes until smooth. Set aside the strawberry puree.
- Whip Cream: In a medium bowl, beat the heavy whipping cream on low speed for 1 minute, then increase to high speed and whip until stiff peaks form, about 4 minutes. Set aside.
- Make Filling: In a large bowl, beat the softened cream cheese and powdered sugar on low speed until creamy. Add sweetened condensed milk, vanilla extract, and the pureed strawberries, then beat until fully combined.
- Combine Filling and Cream: Gently fold the whipped cream into the cream cheese mixture until well blended.
- Add Diced Strawberries: Fold in the diced strawberries evenly into the filling mixture.
- Assemble Dessert: Spread the strawberry cream filling evenly over the graham cracker crust layer in the pan.
- Top: Sprinkle the reserved graham cracker crumb mixture evenly over the top of the dessert.
- Freeze: Place the dessert in the freezer for at least 4 hours or until firm before serving.
