Chicken
- 1 lb chicken thighs, boneless, skinless
- 3 tablespoons potato starch
- 3 tablespoons all-purpose flour
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 3 tablespoons neutral oil for pan-frying
- 8 cloves of garlic, minced
- 2 stalks green onion (green and white parts separated)
- 1 teaspoon red chili flakes
Sauce
- ½ cup chicken stock (or sub: water & chicken bouillon)
- 3 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon dark soy sauce
- 1 teaspoon cornstarch
Garnish
- Green onion (green part)
- Sesame seeds
- SOY GARLIC CHICKEN SAUCE: Combine all the sauce ingredients in a bowl: chicken stock, honey, rice vinegar, dark soy sauce, cornstarch. Mix well and set aside.
- CHICKEN: Pat dry the chicken thighs. Mix potato starch, flour, garlic powder, salt, and pepper on a plate. Coat chicken thighs. Pan-fry in hot oil until golden brown. Set aside.
- SAUCE: In the same pan, sauté garlic, white part of green onion, and chili flakes. Add sauce, cook until thickened. Return chicken to pan, cook until glossy.
- Serve with veggies and rice. Garnish with green onions and sesame seeds.
