Dressing

  • 2 tablespoons low-sodium soy sauce (or tamari for gluten-free option)
  • 1 tablespoon sesame oil
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon grated fresh ginger

Instructions

  1. Prepare Edamame: If using frozen edamame, defrost and cook them by placing in a colander and rinsing under running water or submerging in water in a bowl.
  2. Cook Edamame: Bring a pot of water to a boil, add the edamame, and cook for 3-5 minutes or according to package instructions. Drain and cool, either by letting them sit or running cold water over them.
  3. Combine Salad Ingredients: In a large bowl, mix together the cooked edamame, shredded carrot, shredded cabbage, diced cucumber, sliced green onions, and chopped cilantro.
  4. Make Dressing: In a separate bowl, whisk together soy sauce, sesame oil, olive oil, rice vinegar, honey, and grated fresh ginger until well combined.
  5. Toss Salad with Dressing: Pour the dressing over the salad ingredients and toss thoroughly to combine all flavors.
  6. Let Salad Rest: Cover the bowl and let the salad rest for at least 10-15 minutes to meld the flavors.
