Main Ingredients
- 2 cups Granulated Sugar (Substitute with erythritol or stevia for a sugar-free version)
- 1 cup Corn Syrup (Can be replaced with agave syrup or glucose syrup)
- 1 cup Water
- 1 packet Kool-Aid Powder (Use any flavor preferred)
- 1 teaspoon Baking Soda (Essential for effervescent effect)
- 10 pieces Lollipop Sticks
Equipment
- Silicone Mold or Lollipop Molds (Lightly grease if using silicone)
- Candy Thermometer
- Recipe Preparation: Prepare your workspace by gathering all ingredients and thoroughly cleaning utensils to ensure no contamination. Lightly grease the silicone molds to help with easy release of the lollipops once set.
- Mix Ingredients: In a medium saucepan, combine the granulated sugar, corn syrup, and water. Warm over medium heat, stirring constantly until all the sugar is fully dissolved into the liquid.
- Add Flavor and Baking Soda: Stir in the Kool-Aid powder, mixing until completely dissolved. Then carefully add the baking soda to the mixture and quickly stir—this will cause fizzing and bubbling which gives the lollipops their signature fizz.
- Cook to Hard Crack Stage: Increase the heat and bring the mixture to a boil. Use a candy thermometer to monitor temperature and cook until it reaches 300°F (150°C), the hard crack stage, which ensures the lollipops will harden properly.
- Pour into Molds: Remove the saucepan from heat. Carefully pour the hot candy mixture into the prepared molds. Insert the lollipop sticks immediately so they are properly positioned. Allow the molds to cool undisturbed for 30 to 45 minutes so the lollipops harden completely.
- Remove Lollipops: Once cooled and set, gently twist and pull the lollipops from the molds. They are ready to enjoy or package as treats.
Notes
- Be cautious when working with hot sugar syrup to avoid burns.
- Do not omit the baking soda as it is essential for the fizzing effect.
- Using a candy thermometer ensures the candy reaches the correct stage for proper hardening.
- Feel free to experiment with different Kool-Aid flavors for varied tastes.
- For a sugar-free version, substitute granulated sugar with erythritol or stevia and corn syrup with agave syrup.
