- 1 lb (450g) fresh shrimp, peeled and deveined
Pie Crust:
- 1 pre-made pie crust (store-bought or homemade)
Creamy Filling:
- 1 cup heavy cream
- 1/2 cup sour cream or Greek yogurt
- 1 cup shredded cheese (such as cheddar or Monterey Jack)
- 1/2 cup green onions, chopped
- 2 cloves garlic, minced
- 1 teaspoon Old Bay seasoning (or your favorite seafood seasoning)
- Salt and pepper, to taste
- 1 tablespoon olive oil (for cooking the shrimp)
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Sauté Garlic: In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Cook Shrimp: Add the shrimp to the skillet, seasoning with Old Bay seasoning, salt, and pepper. Cook until the shrimp turn pink and opaque, about 3-4 minutes. Remove from heat and let cool slightly.
- Prepare Filling: In a mixing bowl, combine the heavy cream, sour cream, shredded cheese, and chopped green onions. Mix until smooth and well combined.
- Combine and Bake: Fold the shrimp mixture into the creamy filling until evenly distributed. If using a homemade pie crust, pre-bake it for 8–10 minutes. Otherwise, add the filling to the store-bought crust. Bake in the preheated oven for 25-30 minutes, until set and golden.
