Vegetable Mixture:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped

Quiche Mixture:

  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C).
  2. Sauté vegetables: Heat olive oil in a skillet over medium heat. Sauté onion and bell pepper until soft, about 3–4 minutes. Add spinach and cook until wilted, about 2–3 minutes. Season with garlic powder, salt, and pepper. Remove from heat and cool slightly.
  3. Prepare quiche mixture: In a large bowl, whisk eggs, milk, and cottage cheese. Stir in Italian seasoning, salt, and pepper. Fold in the shredded cheese and the cooked vegetable mixture until well combined.
  4. Assemble and bake: Grease a 9-inch pie dish and pour in the mixture, spreading evenly. Bake for 40–45 minutes, or until the top is golden and the center is set.
  5. Cool and serve: Let cool for 5–10 minutes before slicing. Serve warm or at room temperature.
