Pineapple Rings:

  • 8 pineapple rings
  • 1 cup dark rum
  • 1 cup coconut rum

Coating:

  • 1 1/2 cups all-purpose flour
  • 1 (10-oz.) bag sweetened coconut flakes
  • 2 large eggs
  • 1/2 cup coconut milk

Additional:

  • Vegetable oil, for frying
  • 4 oz. cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Soak Pineapple: Place pineapple rings in a medium bowl, cover with dark and coconut rums. Let soak for at least 1 hour. Drain and pat dry.
  2. Prepare Coating: Set up three shallow bowls with flour, coconut flakes, and whisked eggs with coconut milk.
  3. Coat Pineapple: Dip each pineapple ring in flour, then egg mixture, and coat with coconut flakes, pressing gently to adhere.
  4. Fry: Heat vegetable oil to 350°F (175°C) in a deep pot. Fry pineapple rings in batches for about 1 minute per side until golden. Drain on paper towels.
  5. Make Dipping Sauce: In a bowl, mix softened cream cheese and powdered sugar until smooth. Stir in 2 tablespoons reserved rum, adding more for desired consistency.
