Chicken
- 2 chicken breasts, cubed
- 2 tablespoons butter
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 2 tablespoons minced garlic
- Buffalo Wild Wings Garlic Parmesan Sauce (as desired)
Potatoes
- 4–5 small/medium-sized potatoes, peeled and cubed
- Olive oil (enough to toss potatoes)
- Salt, to taste
- Pepper, to taste
- Garlic powder, to taste
- Paprika, to taste
Toppings
- 1 cup shredded mozzarella cheese
- Prepare the potatoes: Wash, peel, and cut the potatoes into small cubes. Toss them with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
- Cook the potatoes: Preheat your air fryer to 400°F (204°C). Place the seasoned potatoes inside and air fry for about 20 minutes, shaking the basket occasionally to ensure even cooking. The potatoes should be golden and crispy outside, tender inside.
- Season the chicken: While the potatoes cook, cube the chicken breasts and place them in a bowl. Add ½ teaspoon salt, ½ teaspoon pepper, 1 teaspoon paprika, 1 teaspoon onion powder, and 1 teaspoon Italian seasoning. Mix well to coat the chicken evenly.
- Cook the chicken: Heat 2 tablespoons of butter in a skillet over medium-high heat. Add the seasoned chicken cubes and cook until fully cooked through with an internal temperature of 165°F (74°C), approximately 6-8 minutes.
- Add garlic and sauce: Stir in the minced garlic and Buffalo Wild Wings Garlic Parmesan Sauce into the skillet. Cook for 1 to 2 minutes, stirring frequently so the chicken is evenly coated.
- Combine potatoes and chicken: Once the potatoes are done, add them to the skillet with the chicken and toss to coat the potatoes in the sauce.
- Melt the cheese: Sprinkle the shredded mozzarella cheese evenly over the skillet mixture. Cover the pan with a lid and allow the cheese to melt on the stovetop, or place the skillet under a broiler in the oven for 2-3 minutes until the cheese is bubbly and golden brown.
Notes
- You can substitute mozzarella with Parmesan or a cheese blend for varied flavors.
- For a spicier kick, add some crushed red pepper flakes to the chicken seasoning or sprinkle on top before serving.
- If you don’t have an air fryer, roast the potatoes in the oven at 425°F (220°C) for 25-30 minutes, turning halfway.
- Ensure chicken reaches a safe internal temperature of 165°F (74°C) for food safety.
- Leftovers store well in the refrigerator for up to 3 days and reheat in a skillet or microwave.
