Ingredients

Scale

Chicken

  • 2 chicken breasts, cubed
  • 2 tablespoons butter
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce (as desired)

Potatoes

  • 45 small/medium-sized potatoes, peeled and cubed
  • Olive oil (enough to toss potatoes)
  • Salt, to taste
  • Pepper, to taste
  • Garlic powder, to taste
  • Paprika, to taste

Toppings

  • 1 cup shredded mozzarella cheese

Instructions

  1. Prepare the potatoes: Wash, peel, and cut the potatoes into small cubes. Toss them with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
  2. Cook the potatoes: Preheat your air fryer to 400°F (204°C). Place the seasoned potatoes inside and air fry for about 20 minutes, shaking the basket occasionally to ensure even cooking. The potatoes should be golden and crispy outside, tender inside.
  3. Season the chicken: While the potatoes cook, cube the chicken breasts and place them in a bowl. Add ½ teaspoon salt, ½ teaspoon pepper, 1 teaspoon paprika, 1 teaspoon onion powder, and 1 teaspoon Italian seasoning. Mix well to coat the chicken evenly.
  4. Cook the chicken: Heat 2 tablespoons of butter in a skillet over medium-high heat. Add the seasoned chicken cubes and cook until fully cooked through with an internal temperature of 165°F (74°C), approximately 6-8 minutes.
  5. Add garlic and sauce: Stir in the minced garlic and Buffalo Wild Wings Garlic Parmesan Sauce into the skillet. Cook for 1 to 2 minutes, stirring frequently so the chicken is evenly coated.
  6. Combine potatoes and chicken: Once the potatoes are done, add them to the skillet with the chicken and toss to coat the potatoes in the sauce.
  7. Melt the cheese: Sprinkle the shredded mozzarella cheese evenly over the skillet mixture. Cover the pan with a lid and allow the cheese to melt on the stovetop, or place the skillet under a broiler in the oven for 2-3 minutes until the cheese is bubbly and golden brown.

Notes

  • You can substitute mozzarella with Parmesan or a cheese blend for varied flavors.
  • For a spicier kick, add some crushed red pepper flakes to the chicken seasoning or sprinkle on top before serving.
  • If you don’t have an air fryer, roast the potatoes in the oven at 425°F (220°C) for 25-30 minutes, turning halfway.
  • Ensure chicken reaches a safe internal temperature of 165°F (74°C) for food safety.
  • Leftovers store well in the refrigerator for up to 3 days and reheat in a skillet or microwave.
