Pasta:
- 16 ounces rigatoni pasta or penne
Sauce:
- 1/2 cup extra virgin olive oil
- 1 tablespoon fresh garlic, finely minced
- 2/3 cup tomato paste
- 1 1/3 cup heavy cream
- 2 teaspoons red pepper flakes, or to taste
- 2 teaspoons dried basil
- Salt and pepper to taste
- 1/2 cup freshly grated parmesan, more to taste
- 2 tablespoons unsalted butter
- Pasta water
- Optional garnishes: finely chopped parsley and red pepper flakes
- Cook the Pasta: Boil a large pot of salted water. Cook pasta according to package instructions. Reserve pasta water, then drain.
- Prepare the Sauce: In a saucepan, heat olive oil over medium heat. Add garlic and tomato paste, cook for 4-5 minutes until paste darkens.
- Add Cream: Pour in heavy cream, simmer for 2-3 minutes.
- Season: Stir in red pepper flakes, dried basil, salt, and pepper.
- Finish the Sauce: Add parmesan, butter, and pasta water. Mix until creamy.
- Combine: Toss cooked pasta in the sauce until well coated.
- Serve: Optionally top with more parmesan, parsley, and chili flakes.
