Dough
- 300 g all purpose flour
- 140 ml water
- 20 ml olive oil
- 1/4 tsp salt
Filling
- 3 large red onions (finely sliced)
- 1 tbsp balsamic vinegar
- 1 tsp sugar
- 150 g goats cheese (crumbled)
- 1 tbsp olive oil (for frying onions)
- Prepare the dough: In a large bowl, combine the flour, water, olive oil, and salt. Stir the mixture with a wooden spoon or your hands until it comes together, then knead the dough until it forms a soft, elastic ball. Cover with clingfilm or plastic wrap and set aside while you prepare the filling.
- Caramelize the onions: Heat a frying pan over medium heat and add 1 tablespoon of olive oil. Add the finely sliced red onions and cook on low to medium heat for 10 minutes until softened. Add the balsamic vinegar and sugar, then continue frying for another 3 to 5 minutes until the onions are deeply caramelized. Remove from heat and let cool.
- Divide the dough: Knead the dough briefly for 30 seconds, then divide it into six equal pieces. Cover five pieces with a damp tea towel or plastic wrap to prevent drying out while you work.
- Roll out the dough: Lightly flour a clean surface and roll out one piece of dough into a thin circular shape about 20 cm in diameter.
- Assemble the gozleme: On one half of the rolled-out dough, spread approximately one-sixth of the caramelized onion mixture and sprinkle with crumbled goat cheese. Fold the other half of the dough over the filling and pinch the edges firmly to seal the flatbread into a parcel. Set aside and repeat with the remaining dough pieces and filling.
- Cook the flatbreads: Heat a non-stick frying pan over medium heat. Place two gozleme flatbreads into the pan and cook for 3 to 5 minutes on each side, until golden brown patches appear and the dough is cooked through.
- Finish and serve: Once cooked, brush each flatbread with olive oil on both sides for extra flavor and shine. Repeat the cooking and oiling process with the remaining gozleme. Serve warm and enjoy your homemade Turkish stuffed flatbreads!
Notes
- Make sure the dough is soft but not sticky for easy rolling and folding.
- Control the heat carefully when caramelizing onions to avoid burning.
- You can substitute goat cheese with feta or ricotta if preferred.
- Serve gozleme with a side of yogurt or fresh salad for a complete meal.
- Leftover gozleme can be reheated in a pan or oven but are best enjoyed fresh.
