Ingredients

Scale

Sweet Potatoes

  • 2 medium sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Ground Beef and Aromatics

  • 1 lb lean ground beef (93% lean preferred)
  • 1 yellow onion, diced
  • 1 taco seasoning packet (or 2 tbsp homemade taco seasoning)
  • 1 tbsp olive oil

Toppings and Garnishes

  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 2 tbsp hot honey (store-bought or homemade)
  • Optional: chopped cilantro, red pepper flakes, lime wedges for garnish

Instructions

  1. Prep and Roast Sweet Potatoes: Preheat your oven to 400°F (200°C). In a mixing bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, cinnamon, salt, and pepper until evenly coated. Spread them out in a single layer on a baking sheet and roast in the oven for 40 to 45 minutes, stirring once halfway through to ensure even roasting and caramelization.
  2. Cook Ground Beef: While the sweet potatoes are roasting, heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the diced yellow onion and cook until softened and translucent, about 3 to 4 minutes. Add the ground beef to the skillet, sprinkle with the taco seasoning, and cook until the meat is browned and cooked through, about 7 to 10 minutes, breaking it up with a spoon as it cooks. Season with salt and pepper to taste.
  3. Assemble Bowls: Once the sweet potatoes and ground beef are ready, begin assembling your bowls. Start with a base layer of roasted sweet potatoes, top with a generous portion of the seasoned ground beef, then add sliced avocado and dollops of cottage cheese on top.
  4. Add Hot Honey and Garnish: Drizzle each bowl with 2 tablespoons of hot honey to add a spicy-sweet kick. Garnish with optional chopped cilantro, a sprinkle of red pepper flakes, or a wedge of lime for extra flavor if desired. Serve immediately and enjoy!

Notes

  • You can substitute ground beef with ground turkey or chicken for a lighter option.
  • Adjust the amount of hot honey to control the spice and sweetness level.
  • For homemade taco seasoning, use chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper.
  • Leftover roasted sweet potatoes can be stored in an airtight container in the refrigerator for up to 3 days.
  • This dish can also be served warm or at room temperature, making it great for meal prep.
