Ingredients

Scale

Protein and Oil

  • 450g (1 lb) lean ground turkey
  • 1 tablespoon olive oil

Vegetables

  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 medium bell peppers, thinly sliced
  • 2 cups (200g) broccoli florets
  • 1 cup (100g) carrots, thinly sliced
  • ½ cup green onions, sliced (for garnish)

Homemade Teriyaki Sauce

  • ¼ cup (60ml) low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (cornstarch slurry)

Instructions

  1. Make the Teriyaki Sauce: In a mixing bowl, whisk together the low-sodium soy sauce, honey, rice vinegar, and cornstarch slurry until fully combined. Set the sauce aside to use later when cooking.
  2. Cook the Ground Turkey: Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the ground turkey, breaking it apart with a wooden spoon. Cook for 5 to 7 minutes, stirring occasionally until the turkey is browned and fully cooked through.
  3. Add Garlic and Ginger: Add the minced garlic and grated ginger to the cooked turkey. Stir and cook for 1 to 2 minutes until you can smell the fragrant aroma developing.
  4. Add Vegetables: Add the sliced bell peppers, broccoli florets, and thinly sliced carrots to the skillet. Stir well and cook for about 5 to 7 minutes until the vegetables are tender but still crisp.
  5. Add the Teriyaki Sauce: Pour the prepared homemade teriyaki sauce over the turkey and vegetables. Stir thoroughly to coat everything evenly and let the mixture simmer on medium heat for 2 to 3 minutes, or until the sauce has thickened nicely.
  6. Finish and Serve: Remove the skillet from the heat and garnish the stir fry with the sliced green onions. Serve the stir fry hot over rice, quinoa, or noodles for a complete, nutritious meal.

Notes

  • Use lean ground turkey to keep the dish healthy and low in fat.
  • You can substitute honey with maple syrup or brown sugar if preferred.
  • Adjust the level of ginger and garlic based on your taste preferences.
  • For a gluten-free version, replace soy sauce with tamari.
  • Cook vegetables to your desired level of tenderness; avoid overcooking to maintain nutritional value.
  • Serve with steamed rice, cauliflower rice, or noodles to make it a complete meal.
