Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish lightly with olive oil to prevent sticking.
  2. Sauté Aromatics: In a large skillet over medium heat, warm the olive oil and add the chopped onion and minced garlic. Cook until fragrant and softened, about 2 minutes.
  3. Cook Turkey: Add the ground turkey to the skillet. Break it up with a spoon and cook until browned and no longer pink, about 5 to 6 minutes.
  4. Add Tomatoes and Seasonings: Stir in the drained diced tomatoes, dried Italian herbs, salt, and black pepper. Let the mixture simmer gently for 3 to 4 minutes to blend the flavors.
  5. Layer the Casserole: Place half of the sliced zucchini in the prepared baking dish. Spread half of the turkey mixture over the zucchini, then sprinkle with half of the shredded mozzarella cheese. Repeat the layering with remaining zucchini, turkey mixture, and mozzarella.
  6. Bake: Bake the casserole uncovered in the preheated oven for 30 to 35 minutes until it is bubbly and the cheese is golden brown on top. Remove from oven and allow to cool for 5 minutes before serving.
