Hasselback Potatoes with Cheddar, Parmesan, and Fresh Herbs Recipe

4.9 from 78 reviews

Hasselback potatoes are a classic Swedish dish featuring thinly sliced potatoes baked to crispy perfection. The potatoes are cut almost all the way through, fanned out for a beautiful presentation, then seasoned with butter, salt, and herbs before being baked and topped with melted cheddar and parmesan cheese. This recipe yields flavorful, golden, and tender potatoes that make an impressive side dish for any meal.

Ingredients

Scale

Potatoes

  • 4 medium-sized potatoes

Seasoning

  • ½ teaspoon kosher salt (or to taste)
  • 23 tablespoons butter (melted)
  • 23 tablespoons chopped fresh herbs (parsley, thyme, sage, chives, or other herbs) or 2-3 teaspoons dried herbs

Cheese

  • 4 tablespoons cheddar cheese (shredded)
  • 2 tablespoons parmesan cheese (shredded)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for baking the potatoes.
  2. Prepare Potatoes: Wash and dry the potatoes thoroughly. You can peel them if you prefer, especially if the skins are tough or if you want a smoother texture.
  3. Slice Potatoes: Carefully make thin slices vertically down the potatoes, cutting about ¾ of the way through without slicing completely. This creates a fan-like effect when baked.
  4. Season Potatoes: Place the sliced potatoes in a baking dish and gently fan them open. Sprinkle the kosher salt evenly over the potatoes, then drizzle with the melted butter. Next, sprinkle the chopped fresh or dried herbs over the top to infuse flavor.
  5. Bake Potatoes: Bake the potatoes in the preheated oven for 50 minutes, allowing them to cook through and start to crisp on the edges.
  6. Add Cheese and Finish Baking: Remove the potatoes briefly, sprinkle the shredded cheddar and parmesan cheese on top, then return to the oven. Bake for an additional 10-15 minutes until the cheese melts and the potatoes are golden brown and cooked through.
  7. Garnish and Serve: Optionally garnish with extra fresh herbs for color and fresh flavor before serving.

Notes

  • Make sure to slice the potatoes thinly but not all the way through to ensure they stay intact while fanning out.
  • Use a sharp knife or place chopsticks beside the potato to prevent cutting through the bottom.
  • Fresh herbs give better flavor, but dried herbs can be used as a convenient alternative.
  • Butter can be substituted with olive oil for a different flavor profile or dietary preference.
  • Cheese varieties like gruyere or mozzarella can be used in place of cheddar and parmesan depending on taste.
  • Serve these as a side dish alongside roasted meats, grilled vegetables, or salads for a complete meal.
