Instructions

  1. Prepare the base vegetables: Heat olive oil in a large pot over medium heat. Add the diced onion, minced garlic, diced carrots, and diced celery. Sauté these ingredients until they become soft and fragrant, approximately 5-7 minutes.
  2. Add remaining ingredients: To the softened vegetables, add the diced potatoes, cooked lentils, vegetable broth, tomato paste, and thyme. Stir everything well to combine the tomato paste evenly into the liquid.
  3. Simmer the stew: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let the stew simmer gently for 20 to 25 minutes, or until the potatoes are tender and flavors meld together.
