  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup buttermilk (or ½ cup milk + 1 tsp lemon juice)
  • 1 tsp vanilla extract

Cinnamon Sugar Topping:

  • ¼ cup granulated sugar
  • 1 tsp ground cinnamon
  • 2 tbsp unsalted butter, melted

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.
  3. Cream Butter and Sugars: In a large mixing bowl, use an electric mixer to cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  4. Add Eggs: Beat in the eggs one at a time, mixing thoroughly after each addition.
  5. Incorporate Wet Ingredients: Mix in the buttermilk and vanilla extract until well combined.
  6. Blend Dry & Wet Ingredients: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
  7. Prepare Cinnamon Swirl: In a small bowl, combine the ¼ cup granulated sugar and 1 tsp ground cinnamon for the cinnamon swirl.
  8. Layer the Batter: Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture on top. Add the remaining batter, then sprinkle the rest of the cinnamon sugar mixture on top of the loaf.
  9. Swirl the Mixture: Use a knife or skewer to gently swirl the cinnamon sugar into the batter, creating a marbled effect.
  10. Bake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  11. Cool: Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
