  • 5 cups fresh peaches, peeled and sliced
  • 1 cup granulated sugar
  • 1⁄2 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1⁄4 teaspoon ground nutmeg
  • 2 teaspoons lemon juice
  • 1 tablespoon cornstarch

Topping:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1⁄2 teaspoon salt
  • 1⁄2 cup (1 stick) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 3⁄4 cup milk

Instructions

  1. Preheat your oven to 375°F (190°C). In a large bowl, combine the sliced peaches, 1 cup of granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Stir well to combine and set aside.
  2. In another bowl, mix the flour, remaining 1 cup of granulated sugar, baking powder, and salt.
  3. Pour the melted butter into a 9×13 inch baking dish.
  4. Add the vanilla extract and milk to the flour mixture and stir until smooth.
  5. Pour the batter over the melted butter in the baking dish without stirring.
  6. Spoon the peach mixture evenly over the batter. Do not stir.
  7. Bake in the preheated oven for 40-45 minutes or until the top is golden brown and the edges are bubbling.
  8. Allow the cobbler to cool for at least 10 minutes before serving.
