Carrots:

  • 1.5 pounds carrots, peeled, trimmed, and cut into 1.5-inch pieces

Glaze:

  • 4 tablespoons honey
  • 4 tablespoons butter, cubed
  • 1 teaspoon dried thyme
  • ½ teaspoon fine sea salt

Instructions

  1. Prepare Ingredients: Peel, trim, and cut the carrots. Cube the butter.
  2. Combine Ingredients: Place carrots, honey, butter, dried thyme, and sea salt in a 3.5 – 4 quart slow cooker.
  3. Cook: Cook on HIGH for 3 hours until carrots are tender. Shake the crockpot lightly without removing the lid once the butter has melted (about 15-30 minutes into cooking) to coat all carrots.
  4. Thicken Glaze: Remove the lid and cook for an additional 10-15 minutes, stirring occasionally with a wooden spoon to thicken the glaze.
