Zucchini:

  • 3 medium Zucchini, sliced

Cheese Mixture:

  • 1 cup Cheddar Cheese, shredded
  • 1/2 cup Parmesan Cheese, grated
  • 1 cup Breadcrumbs
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Zucchini: Slice the zucchini into thin rounds or half-moons, sprinkle with salt, let sit for 10 minutes, then pat dry.
  3. Sauté Garlic: In a skillet, heat olive oil and sauté minced garlic until fragrant.
  4. Combine Ingredients: In a bowl, mix zucchini, sautéed garlic, cheddar cheese, half of the Parmesan, breadcrumbs, olive oil, salt, and pepper.
  5. Transfer to Baking Dish: Transfer the mixture to a greased baking dish.
  6. Add Toppings: Sprinkle remaining Parmesan and optional breadcrumbs on top.
  7. Bake: Bake for 25-30 minutes until golden brown and zucchini is tender.
